BANANA CHOCOLATE CHIP OAT FLAXSEED ALMOND MUFFINS RECIPE



INGREDIENTS


  • 2 ripe bananas

  • 1 teaspoon baking soda

  • 1 teaspoon hot water

  • ¼ cup olive oil

  • ¾ cup ground flaxseed meal

  • ¾ cup organic sugar

  • 1 egg, lightly beaten

  • 1 teaspoon vanilla

  • 1 cup oat flour

  • ½ cup almond flour

  • 1 teaspoon baking powder

  • ¼ teaspoon sea salt

  • 1 cup semi-sweet chocolate chips





DIRECTIONS


  1. Preheat oven to 375 degrees.

  2. In a small bowl, mash together bananas, baking soda and water. In mixing bowl, beat together oil, ground flaxseed, sugar, egg and vanilla. In a small bowl, whisk together oat flour, almond flour, baking powder, and salt. Add to batter and mix well. Stir in chocolate chips. Spoon into muffin tins lined with baking cups. Bake 20-22 minutes, until toothpick comes out clean when inserted in the middle. Source
