Ingredients
- 1 ½ English cucumbers, thinly sliced
- 1 ½ tsp. kosher salt, divided
- 2 tbsp. rice wine vinegar
- 2 tbsp. light sour cream
- 2 tbsp. 2% fat Greek yogurt
- 1 tbsp. chopped fresh dill
- ¼ tsp. fresh ground black pepper
Instructions
- Place cucumbers in a colander and toss with 1 tsp. salt. Let sit for 10 minutes. Rinse well and drain again.
- Lay cucumber out on paper towels to dry.
- In a medium bowl, mix together remaining ingredients. Stir in cucumber.
