Easy Curry Rice Healthy Recipes

Ingredients



1 cup long grain rice and 2 cups water

1 green bell pepper

1/2 white onion, chopped

1 teaspoon Curry Powder

1 teaspoon salt

1/4 teaspoon black pepper

fresh green onions for sprinkling over the top when serving (I also use fresh marjoram leaves when it is in my garden)

Instructions




  1. Cook the rice in a Rice Cooker. This makes it all really really easy.

  2. While the rice is cooking - in a large skillet - saute the chopped white onion and green bell pepper in 1 Tablespoon water until the onion is translucent. About 10 to 15 minutes.

  3. Stir in the curry powder, salt and pepper.

  4. Stir on low for 5 minutes.

  5. Add the cooked rice to the skillet mixture and heat through.

  6. Serve with the chopped green onions sprinkled over the top. Source
